Glasgow fillet stew is a fantastic cut of meat to use when slow cooking. The process allows the meat to develop a fantastic flavour and a terrific tender texture.
The glasgow fillet is a cut taken from the shoulder of a cow. It is as a result of this that the meat becomes so tender and flavoursome when cooked.
The following instructions are guidelines, cooking times may vary depending on the weight of the cut.
In order to add as much flavour as possible to the meat follow these basic cooking instructions. Put the pan onto a high heat, season your meat and once the pan is hot, add to the pan. After you have added the meat add some liquid to the pan, this can be stock, water or wine. This should be approximately half the volume of the meat. Bring to the boil, then reduce the heat and leave to simmer. Cook for approximately 1hr and 45 minutes.
This particular cut also works fantastically well in a stew, and other recipes that consist of a long cooking time. By cooking it slowly the meat will become beautifully tender and flavoursome.
