Lamb chump chop are a delicious and also versatile choice of cut. They can be cooked quickly in a pan, or they can be slow cooked and either way the results with be a lovely, tender, flavoursome chop.
The chump chop is a cut taken from behind the loin, at the top of the leg of the lamb. This results in beautifully tender meat with an abundance of flavour.
Season your chump chops appropriately. Put a pan with a little bit of oil onto a medium heat, and when the pan is suffieciently warm add the chop. Cook for 5-8 minutes on both sides, ensuring that it is brown all over. Then take off the heat and allow to stand for 5 minutes as this allows the flavours to really develop. Then ass your favourite vegetables, a nice bottle of wine, and enjoy!
